Ok, before we begin, repeat after me: ah-sigh-ee. Got it!? Now what is it, besides the best breakfast EVER?
An acai bowl is a thick smoothie made from acai puree, fruits, and some sort of liquid that has amazing health properties! Acai is a fruit from the Amazon rainforest in Brazil and has tons of antioxidants, heatlhy fats, protein, and fiber. Apparently indigenous tribes in the rainforest subside nearly entirely off this little berry!
I had one of these thick smoothies at Pulp, a smoothie bar nestled in a bike shop, and it was love at first bite. The berry puree is tart, but paired with creamy almond butter, frozen banana, and coconut milk makes for a delish and healthy breakfast or snack.
I got my acai puree from the Friendly City Food Co-op (one of the most amazing grocery stores ever!), but you can find a retailer near you on Sambazon’s site!
The recipe is almost too simple, but here it goes: blend a frozen banana, splash of coconut milk, a scoop of almond butter, and a pack of frozen acai puree together until smooth. That’s it!
I topped mine with strawberries, bananas, chia seeds, and coconut, but you can put on any mix you want! Granola is awesome as well as flax/mixed fruits/nuts/anything really.
So there you have it, a 5 minute breakfast that is so much better for you than stopping at a fast food place! The recipe is incredibly forgiving; substitute frozen berries for the banana, almond milk for the coconut milk, or peanut butter instead of almond butter. Acai Bowl (serves 1)
- 1 frozen banana
- 1 pack of frozen acai puree
- 1/4 cup coconut milk (or any non-dairy milk/apple juice)
- 2 T almond butter
- Blend all ingredients until smooth, and top with whatever you like!
